Baked Salmon

(Great as a show-off dinner, especially for a barbeque).

You'll need about 1/2 to 3/4 lb. of salmon per person, but a
good plan is to get enough to have 2 lb's. left over for a
cassarole the following night.

Rinse off the fish and cut off the tail if necessary.

Mix up about 1/2 cup of mayo per lb. of meat with dill weed,
salt and pepper (maybe a tbsp of dill weed and 1/2 of salt
and pepper). Spread the salmon on a 3 foot length of
aluminum foil and spread this mixture over it, completely
covering the salmon.

Wrap the salmon in the tin foil and cook at approximately
325 - 350o or, even better, do on the barby at low to medium
low heat for about 45 minutes or an hour. Turn it over at
the half way point.

Serve with tartar sauce.
