Beer Batter

Ingredients

* 1 1/2 teaspoons pepper, fresh cracked
* 1 teaspoons salt
* 2 cups all-purpose or rice flour (preferred)
* (or 1 1/2 cup rice flour and 1/2 cup cornstarch)
* 2 eggs

* 1 teaspoon baking powder
* 1 teaspoon garlic, granulated
* 1/4 teaspoon cayenne pepper
* 12 ounces beer, medium body

(Note, Tyler uses soda, not beer, and two egg yolks instead of whole eggs)

Directions

Combine salt, pepper,cayenne, baking powder and garlic, mix thoroughly. Sift in the flour and again mix thoroughly. Whisk in the beer and eggs until the batter is completely smooth and free of any lumps (a low-speed electric mixer is useful). Refrigerate for 15 minutes to 1 hour. Note: The batter can be made up to 1 hour ahead of time.
