Chicken Cacciatore Soup
3 Chicken breast halves
w/skin on
3 cloves garlic (or to taste)
4 Rosemary sprigs (taken off stem) (or to taste)
1 Qt Chicken broth
1 8 oz. can of tomato sauce or 15 oz can of diced tomatoes
3 carrots
3 stalks celery (optional)
Heat pot to med/high.
Add two turns of olive oil. Add chicken and brown on both sides
Set chicken aside.
Add more oil if needed
and sauté the onions, celery, and carrot for approximately
5 minutes.
Add garlic and
sauté for an additional 2 - 3 minutes, then add
rosemary and sauté for an
additional 2 - 3 minutes.
Add tomato, chicken broth,
and chicken and simmer for ~ 3 hours.
Remove chicken from the
pot
separate the meat and return it to the pot, disgarding
the rest.
Other options: Add pasta
or rice, any other veggies.
